Summer Shrimp Ceviche

For the NBA Finals Game 1 I was craving Mexican food. It probably didn’t help that it was “Taco Tuesday” but knowing how over hyped everywhere would be I decided to bring the fiesta home! I decided to make what i call a Summer Shrimp Ceviche.

Ingredients: (serves 6)
1-1.5lbs of butterflied raw shrimp (medium sized)
6 large lemons
4 large tomatoes
1 onion
2 jalapeños (or more if you want it spicier)
1 bushel of cilantro
1 avocado
1 tablespoon salt
Tostadas (I purchased Guerrero brand)
1 container of Mango Salsa
1 can black beans
(Prep time should take no longer than 20min)

Directions:

step 1: In a large mixing bowl placed peeled and washed shrimp with nothing else.
step 2: Cut 5 out of 6 lemons in half hamburger style squeeze into bowl. Removing seeds as you go. Stir shrimp around so that all of them are saturating in lemon juice. Place in fridge stirring occasionally for 20min.

step 3: While shrimp is cooking ( yes the acid in the lemons serves as a cooking agent), dice all vegetables up, minced very small add and mix your onion, tomato, jalapeño & cilantro together.

Also begin to start cooking your black beans. I used garlic cloves and a few onion layers for added flavor.
step 4: Once the shrimp has turned pink and white in color and no longer has signs of being grey or opaque place your vegetables into the larger bowl with the shrimp stirring everything together thoroughly. Add the last lemon by squeezing more juice from it into the bowl. Ultimately add your mango salsa for the finished taste.

step 5: For serving recommendations you can leave this out for a party with chips/ tostadas but I wanted to be a little more fancy lol. Place a tostada on your plate. Add a flat layer of black beans to your tostada and place a large spoonful of ceviche on top. to garnish and because I’m a California girl I placed a small sliver of avocado on top.

Now enjoy! The favors of sweet mango, spicy jalapeño, warm black beans, pungent onion, and chilled shrimp all together for a nutritious and lo carb diet that’s delicious! Paired well with sangrias, beer, juice, water or margaritas and your meal is complete! Enjoy! I know I sure did ;)
